Preparation directions
1. Acquaint yourself with the basic precautions on handling raw meat as recommended by the US Department of Agriculture (USDA). 2. Select the leanest meats as you cut off fatty sections. Trim also the hard parts of the meat such as tendons, gristles or other body tissues. Removing the inappropriate meat edges will facilitate healthier preservation and drying. 3. Refrigerate your beef for a short duration before you cut it into pieces. You can also freeze the entire piece for a lengthy period then warm it later to lose numbness. This will enable easy, firm and uniform chopping. 4. At times, selected meat may have sections that further its taste. Some well known meat steaks such as flank, skirt or London broil have sections of lined fibers or grains. The lines are mainly caused by fibers that remain undigested as the animal is being slaughtered. When you cut through the grain or fiber line, the meat becomes softer and easy to chew. You should chop the grains and the fibers together so that your homemade beef jerky is tender and ceremoniously bizarre. 5. Ensure that all cut pieces are of equal sizes and length; they should be 0.25 inches thin or less. Thin slices of meat impart easier cooking and drying. 6. Soak the jerky in vinegar, sauce and other seasonings and freeze it. Do not store marinated steak in open places which could let in bacteria. 7. Turn round the steak time after time in the marinade. Ensure that the marinade amount is enough to penetrate on the steak perfectly in all spots. 8. Dry the strips to a 71oC temperature as detailed by the USDA. This ensures that bacteria such as e coli, salmonella or listeria are not altered. 9. Place the beef strips into an oven or dehydrator and cook them at a constant heating of 130o to 140o Celsius. 10. When the homemade beef jerky is ready, remove it from the oven and allow it to cool down. Put the strips in a dry container, they shouldn't be moist.
